1.5 oz Corgi Spirits Pembroke Gin
0.75 oz fresh lime juice
1 oz simple syrup (1 part sugar : 1 part water)
8 mint leaves
Ginger beer (Fever Tree preferred)
Lime wheel and mint sprig for garnish
In a cocktail shaker, muddle mint leaves, add ice, gin, lime juice, syrup and shake vigorously. Strain into a copper mug over fresh ice, top with ginger beer and garnish with lime wheel and mint sprig.
